Suomi 100-v! Finland, 100 years! Make blue and white muffins to celebrate!

Today we are on celebratory mood for Finland has its 100th birthday.

In the evening we will light candles and eat a big diner. We baked blue and white blueberry-coconut muffins for dessert. Here is the recipe:

Blueberry-coconut muffins

125 g butter
2 dl sugar
2 eggs
5 dl flour
1 dl coconut flakes
1 1/4 tsp baking powder
1 tsp vanilla sugar
1 1/4 dl coconut milk
1 dl frozen blueberries

Beat the butter and sugar together. Add the eggs while beating continuously. Add the dry ingredients that have been mixed together. Add the coconut milk and mix. Finally carefully mix the frozen blueberries in. The dough makes 12 pretty big muffins. Bake at 175 degrees Celsius for about 30 min. Check with a cocktail stick that the muffin dough is ready before you take them out. Poke the muffin and if the dough sticks, leave the muffins in the oven for a few more minutes.

When the muffins have cooled down. Decorate them with whipped cream and blue sprinkles. Make small Finnish flags printing out my pdf and glue them onto cocktail sticks. Stick them onto the muffins to decorate.

Suomen lippunauhan liput, Small Finnish flags


125 g voita
2 dl sokeria
2 munaa
5 dl vehnäjauhoja
1 dl kookoshiutaleita
1 1/4 tl leivinjauhetta
1 tl vaniljasokeria
1 1/4 dl kookosmaitoa
1 dl pakastettuja mustikoita

Vatkaa voi ja sokeri. Lisää munat yksitellen vatkaten. Lisää yhdistetyt kuivat aineet ja sekoita. Lisää kookosmaito ja sekoita. Lisää viimeiseksi varovaisesti sekoittaen mustikat. Jaa taikina muffinivuokiin. Taikinasta tulee 12 amerikanmuffini-kokoista muffinia. Paista 175 asteessa noin 30 min. Tarkista cocktailtikulla tökkäämällä, ovatko muffinit kypsiä. Jos taikinaa tarttuu tikkuun, muffinit ovat vielä raakoja keskeltä.
